Lübeck coconut macaroons

Ingredients for 1 servings:

  • 250 g desiccated coconut
  • 5 egg whites
  • 2 tbsp rum
  • ½ bag(s) flavoring (Lemon peel or orange peel or grated peel of ½ lemon)
  • 250 g powdered sugar
  • 400 g marzipan paste
  • 100 g milk chocolate coating

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Preheat the oven to 150°C (top/bottom heat). Beat 5 egg whites until stiff, add the powdered sugar and stir, then add the marzipan mixture and continue stirring. Then add the desiccated coconut, rum, and lemon zest and stir vigorously again. Drop the batter in small heaps onto a baking sheet lined with baking paper. Bake the macaroons for about 10-15 minutes until golden brown. Meanwhile, pour the chocolate coating into a cup and melt it in a hot water bath. Cover the finished coconut macaroons with a small dollop of chocolate coating.
