Ingredients for 4 servings:

  • 5 eggs
  • 500 g flour
  • 30 g yeast
  • 500 ml milk
  • 50 g sugar
  • 1 pinch of salt
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

First beat the 5 eggs until frothy, then add the flour, stir the yeast into lukewarm milk (the milk must NOT get hot!!!!) and add to the egg and flour mixture, add sugar, if you like you can also add vanilla sugar and salt. Now just mix everything well. The gateau dough needs to rise for about 20-30 minutes at room temperature. That’s it. You need a gateau pan or poffertjes pan (Dutch version) for the gateau – you can buy them online. The gateau pan should NEVER be on the highest heat when baking the gateau, it is best to use a medium heat so that the gateau is cooked golden brown in oil. You can turn the gateau well with a meat fork. The gateau is served with powdered sugar. They also taste delicious with apple sauce, thickened cherries, eggnog, Nutella, jam… so very versatile.
