Marzipan macaroons with apricot filling

Ingredients for 1 servings:

  • 200 g marzipan
  • 1 egg white
  • 100 g powdered sugar
  • ½ tsp lemon zest
  • 100 g almonds, chopped
  • 200 g apricot jam
  • 1 dashes lemon juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 22 minutes

Makes approx. 16 macaroons.

Grate the marzipan. Briefly whisk the marzipan, powdered sugar, and egg white in a bowl until smooth. Roll roughly teaspoon-sized portions of the dough in the chopped almonds, shape into a ball with your palms, place on a baking sheet lined with baking paper, and make a hollow in the center with your finger. Bake at 180°C (convection oven) for 10 minutes. Meanwhile, strain the jam through a sieve and mix with the lemon juice. Remove the macaroons from the oven, pour the jam into the hollows, and bake for another 2 minutes.
