Ingredients for 4 servings:

  • 1,000 g tomatoes, ripe, skinned, pitted
  • ½ bunch flat-leaf parsley, chopped
  • 200 g bacon, streaky, smoked, cut into fine strips
  • 30 g butter
  • 2 small onions, finely diced
  • 2 cloves garlic, finely diced
  • Salt
  • Black pepper, freshly ground
  • some sugar
  • 500 g pasta (tube pasta), short, diagonal
  • 100 g Parmesan, fresh, grated

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Press the core of the tomatoes through a sieve (or use a food mill) and dice the flesh. Brown the bacon in the butter, remove, and set aside. Fry the diced onion and garlic in the fat until translucent. Add the seasoned tomato puree and simmer over low heat for about 2 minutes. Now heat the diced tomatoes, parsley, and bacon strips. Adjust seasoning if desired. Cook the pasta in salted water for about 10 minutes until al dente, drain, toss with the sauce, and sprinkle with Parmesan cheese.
