Ingredients for 2 servings:

  • 2 eggs
  • 2 small apples
  • 1 banana(s)
  • 200 ml oat flakes
  • 1 tsp cinnamon powder
  • 1 tsp honey (can be omitted)
  • 1 tsp baking powder

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Separate the eggs and beat the egg whites until stiff peaks form. Mash the banana with a fork, grate the apples, and beat with the egg yolks, baking powder, cinnamon, and honey, if desired, until frothy. Measure the oat flakes (be careful to use milliliters, not grams!) and stir them into the egg yolk mixture. Add the beaten egg whites and fold them in. Using a teaspoon, place small heaps onto a baking sheet lined with baking paper and flatten slightly. Bake at 180°C (top and bottom heat) for about 20 minutes. Tip: Can be topped with chocolate icing. The entire batter contains about 1400 kcal, which works out to about 45 kcal per cookie for 30 cookies.
