Ingredients for 2 servings:
- 1 tbsp olive oil
- 1 tbsp tomato paste
- 1 small can of tomatoes, chopped
- 200 ml vegetable stock
- e.g. chili pepper(s), dried
- e.g. rosemary
- n. B. Thyme
- 1 pinch(s) of sugar
- 3 tbsp olives, green or black
- Pepper, possibly salt
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
e.g. with saltimbocca or simply with pasta
Heat the oil and sauté the tomato paste in a pan. Add the tomatoes, pour in the vegetable stock, and reduce slightly. Cover and simmer over medium heat for about 5 minutes. Season to taste with the spices mentioned. You can use this sauce to simmer saltimbocca (recipe in my profile). In the meantime, cook pasta (e.g., penne).
