Bolognese with zucchini and minced meat

Ingredients for 3 servings:

  • 150 g minced meat
  • some oil
  • ½ onion(s)
  • 1 carrot(s)
  • 1 large zucchini
  • 600 g tomatoes, chopped, from the can
  • e.g. instant vegetable broth
  • e.g. salt and pepper
  • Herbs of your choice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Brown the minced meat and onions in hot oil. Finely dice the carrots and add them. Add the chopped tomatoes and the diced zucchini and let simmer for a while. Season with vegetable stock (I use 2 teaspoons for small children), salt, pepper, and herbs to taste.
