Ingredients for 4 servings:
- 75 g bacon
- 20 g butter
- 40 g flour
- ½ liter of milk
- 125 ml chicken broth
- 1 cauliflower
- 150 g cooked ham
- 2 bunches of chives
- 1 tbsp Worcestershire sauce
- 1 tbsp lemon juice
- 2 egg yolks
- salt and pepper
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cut the bacon into thin strips and fry until crispy. Drain the bacon slices on kitchen paper. Melt the butter in the bacon fat, stir in the flour, and sauté briefly. Mix the milk and stock and pour in. Bring to a boil, stirring constantly, and simmer over low heat for 15 minutes. Cook the trimmed cauliflower whole in plenty of salted water. Add the finely diced ham and finely chopped chives to the sauce and let stand for 5 minutes. Season to taste with salt, pepper, Worcestershire sauce, and lemon juice. Remove from the heat and fold in the beaten egg yolk. Pour some of the sauce over the cauliflower and garnish with the drained bacon strips. Serve the remaining sauce separately. Serve with boiled potatoes.
