Ingredients for 1 servings:

  • 1 small onion(s)
  • 25 g flour
  • ¼ liter milk or meat/vegetable/fish broth
  • salt and pepper
  • nutmeg
  • Worcestershire sauce

Classic recipe: 3 fat eyes Pfundskur recipe: 0 fat eyes Peel the onion and cut into fine cubes. Lightly fry the flour in a pan for 2 minutes without fat. Add the finely diced onion and fry with the flour for another 1 minute. Remove the pan from the heat and let the flour cool for about 2 minutes. Pour the cold liquid into the flour and onion mixture and whisk until smooth. Bring the whole thing to a boil, stirring constantly with a flat wooden spoon, and simmer gently for another 10 minutes. Season the sauce with salt, pepper, nutmeg and a dash of Worcestershire sauce. If desired, cream it with a hand blender before serving.
