Sparkling wine cake

Ingredients for 1 servings:

  • 4 eggs, separated
  • 125 g sugar
  • 125 g hazelnuts, ground
  • 2 tbsp chocolate, grated
  • 1 sachet of pudding powder (quick pudding apricot/passion fruit)
  • 1 small bottle(s) of sparkling wine
  • 500 ml cream
  • 2 packs of cream stiffener
  • 2 packets of vanilla sugar
  • 1 can peach(s)
  • Fat for the mold
  • Chocolate shavings

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Beat the egg yolks and sugar until frothy. Add the hazelnuts and chocolate. Beat the egg whites until stiff and fold in. Grease the bottom of a springform pan, pour in the batter, and bake at 180°C for about 30 minutes, then let cool. Whip the sparkling wine with the pudding powder for about 10 minutes (don’t forget the flavor capsule in the package). Whip the cream with the cream stiffener and vanilla sugar until stiff. Mix the pudding and cream well. Place a cake ring around the cake base. Arrange the well-drained peaches on the base. Spread the cream on top and decorate with some grated chocolate. Enjoy well chilled.
