Kohlrabi soup with smoked salmon

Ingredients for 4 servings:

  • 500 g kohlrabi
  • ½ liter vegetable broth
  • 125 ml cream (mix with yogurt, sour cream or crème fraîche if desired)
  • Salt
  • nutmeg
  • 100 g smoked salmon

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and roughly dice the kohlrabi. Finely chop the heart leaves and set aside. Cook the kohlrabi cubes in the broth for about 10 minutes, then puree the soup. Add the cream, bring to a boil briefly, and season with nutmeg and a little salt. Cut the smoked salmon into strips and stir into the soup along with the heart leaves.
