Apricot – Melon – Jam

Ingredients for 6 servings:

  • 600 g apricot(s) (weighed without stones, then roughly diced)
  • 400 g honeydew melon(s) (flesh, roughly diced)
  • 500 g gelling sugar, 2:1
  • 3 tbsp rum
  • 1 lemon(s), juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

6 jars of 250 g each

Place the apricot and honeydew melon pieces in a saucepan, puree, and mix with the lemon juice and preserving sugar. Bring to a boil while stirring, then simmer for 3 minutes. Stir the rum into the hot jam. Then pour into the prepared twist-off jars, seal immediately, and let stand with the lid on for 5 minutes.
