Vegetarian "marrow dumplings"

Ingredients for 4 servings:

  • 1 stale roll
  • Water for soaking
  • 30 g butter
  • 2 pinches of salt
  • 2 pinches of nutmeg, freshly grated
  • n. B. Breadcrumbs, fine
  • 1 egg(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Soup garnish

Soak the wheat bread roll in water and then squeeze it well with your hands. Place it in a bowl with the egg, salt, butter, nutmeg, and finely ground breadcrumbs and knead thoroughly. Add just enough breadcrumbs to form a pliable, yet not too sticky, mass. Then form small, round dumplings and place them in boiling water or vegetable broth. Once the dumplings float to the surface, they’re cooked. Remove them with a slotted spoon and add them to the soup.
