Ingredients for 1 servings:

  • 4 bananas, firm but ripe
  • 1 tsp lemon juice, freshly squeezed
  • 250 g whole grain flour
  • 1 tsp baking powder
  • ⅛ tsp salt
  • 250 g butter, cut into small pieces
  • 300 g oat flakes
  • 250 g sugar
  • 2 eggs, lightly beaten
  • Fat for the mold

Preheat the oven to 180°C. Grease a baking dish (approx. 33 x 22 cm). Peel the bananas and slice them thinly. Place the banana slices in a small bowl of cold water. Add the lemon juice to prevent them from browning. Combine the flour, baking powder, and salt in a large bowl. Using a mixer, beat the butter into the flour mixture until fine crumbs form. Mix in the sugar and oats. Mix in the eggs and form a firm batter. Divide the batter into two parts, press one half into the baking dish, forming a soft, flat base. Drain the bananas and arrange them on top of the batter. Spread the remaining batter on top. Bake for 25-30 minutes, or until the banana fingers are golden brown. Let them cool completely before cutting them into pieces. If you like, you can replace some of the oats with a cereal mix.
