Ingredients for 1 servings:
- 500 ml beer (Mumme beer)
- 150 g brown cane sugar, possibly half less
- 60 g malt extract (Braunschweiger Mumme)
- 2 cm fresh ginger root, sliced
- 1 cinnamon stick(s)
- 1 clove(s)
- 500 ml brandy
- 1 orange(s), untreated, including juice and peel
Instructions
Working time approx. 20 minutes; Rest period approx. 30 days; Cooking/baking time approx. 10 minutes; Total time approx. 30 days 30 minutes
With the traditional drink “Braunschweiger Mumme”.
Pour the beer into a saucepan and heat gently. Add the mumme, cane sugar, peeled and sliced ginger root, orange zest and juice, cinnamon stick, and clove, and simmer for 10 minutes. Then remove from the heat and let cool. Add the brandy, pour everything into a large jar, and seal. Let the liqueur steep in a cool place for at least four weeks, then strain. Bottle the liqueur and seal. Note: The liqueur is quite sweet, which is what a liqueur should be. If you don’t like it quite so sweet, simply reduce the sugar to 100g.
