Tomato minced meat soup

Ingredients for 4 servings:

  • 1 liter vegetable broth
  • 300 ml tomato(s), pureed
  • 2 tbsp tomato paste
  • 2 tbsp Ajvar, heaped
  • 500 g minced meat
  • ½ stalk(s) leek
  • 2 m.-sized onion(s)
  • 1 bell pepper(s), yellow
  • 500 g potatoes
  • 1 can of corn
  • salt and pepper

Combine the vegetable stock, passata, tomato paste, and ajvar in a large pot and bring to a boil. Once boiling, reduce the heat to just below boiling point. Season with salt and pepper to taste. In the meantime, peel the potatoes and cut them into small pieces. Add them to the pot. Add the minced meat to the pot and stir with a whisk until only small pieces remain. Then finely chop the leek, onion, and bell pepper and add them to the pot. Finally, add the corn. Simmer for 20-30 minutes. The soup is ready when the potatoes are tender.
