Ingredients for 4 servings:
- 1 kg asparagus
- 1 egg(s)
- 2 tbsp vinegar (white wine vinegar)
- 2 tsp mustard, hot
- 7 tbsp oil (rapeseed oil)
- 20 g butter
- salt and pepper
- Sugar
- Chili pepper(s), dried, from the mill
- Worcestershire sauce
- Basil, dried
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cut the asparagus into bite-sized pieces, cook in salted water with a little sugar and butter until al dente, and let cool slightly. For the marinade, combine the vinegar, mustard, Worcestershire sauce, salt, pepper, chili, and basil, then gradually stir in the oil. Cut the egg into small cubes and fold it into the lukewarm asparagus along with the marinade. Serve immediately.
