Ingredients for 4 servings:
- 500 g potatoes
- salt and pepper
- 2 onions, red, quartered
- 2 zucchini, sliced
- 1 red bell pepper(s), cut into pieces
- 1 clove(s) garlic
- 3 tbsp olive oil
- 1 tbsp rosemary, finely chopped
- 25 g Parmesan, coarsely chopped
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Wash the potatoes and cook in salted water until tender, about 15 minutes, then steam thoroughly. Preheat the grill. Arrange the potatoes, onions, zucchini, and bell peppers on a baking sheet. Press the garlic into the oil. Stir in the rosemary, season, and drizzle over the vegetables. Brown the vegetables under the grill for about 15 minutes, turning occasionally. Arrange on a platter and drizzle with the cooking liquid from the baking sheet. Sprinkle with Parmesan cheese.
