Ingredients for 1 servings:
- 300 g dough (wheat sourdough)
- 300 g flour (whole wheat flour)
- 200 g flour (spelt flour)
- 100 g rye meal, soaked in boiling water
- 70 g sesame seeds, soaked in boiling water
- 2 tbsp natural yogurt
- 1 tbsp maple syrup
- 3 tbsp onion(s) (fried onions)
- 1 tbsp sea salt
- ½ tsp coriander
- 150 ml water, warm
- Grease for the tray

The day before, pour boiling water over the rye meal and sesame seeds and stir thoroughly. On the day of baking, combine all ingredients, including the liquid from the meal and sesame seeds, and let rest, covered, for about 45 minutes. Then knead thoroughly again and form a round loaf. Place in a proving basket (or other dish). Cover and let rest in a warm place for 2 hours. Turn the loaf out onto a greased baking sheet or preheated baking stone and brush with water. Sprinkle with some sesame seeds. Place a bowl of boiling water in the preheated oven. Bake at 200 degrees Celsius (top/bottom heat) for 50-60 minutes. The finished loaf weighs about 1.5 kg (3.5 lbs).
