Ingredients for 1 servings:
- 500 ml water, lukewarm
- 1 tsp sugar, brown or white, alternatively honey
- 4 tbsp raisins or 2 dates, unsulfured
Instructions

You will need 1 sterile screw-top jar with a capacity of approximately 700 ml. 1. Sterilize your jar by cleaning it with boiling water. 2. Add the raisins, sugar, and water to the jar and screw on the lid. Shake vigorously until everything is well mixed. 3. Place the yeast mixture in a warm place and shake at least twice. 4. After 8 days at the latest, the yeast water is ready to bake. For 500 g of flour, you will need between 100 and 125 ml of yeast water. This corresponds to half a cube of yeast or one packet of dried yeast. Make sure to let the dough rise for at least twice as long as the recipe calls for.
