Banana Pecan Muffins

Ingredients for 12 servings:

  • 260 g flour (type 405)
  • 1 packet of baking powder
  • 1 packet of vanilla sugar
  • 100 g sugar
  • 1 egg(s)
  • 125 g butter, soft
  • ¼ liter of milk
  • 1 banana(s), ripe
  • 100 g nuts, chopped pecans or almonds

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 180°C. Sift the flour into a bowl and mix with the baking powder and vanilla sugar. Cream the sugar and egg until creamy. Gradually add the butter. Slowly stir in the flour mixture and thin with the milk. Peel the banana, mash it with a fork, and add the pecans or almonds. Stir the banana puree into the batter. Pour the batter into the muffin cups, filling them two-thirds full. Bake in the oven for 25-30 minutes until golden brown. Remove the muffins from the oven and let them rest in the pan for another 5 minutes. Remove from the pan and let cool on a wire rack or serve warm.
