Strawberry yogurt muffins

Ingredients for 12 servings:

  • 280 g flour
  • 150 g strawberries, chopped
  • 50 g chocolate, white or strawberry chocolate, chopped
  • ½ tsp cinnamon
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 egg(s)
  • 120 g sugar
  • 80 ml vegetable oil
  • 300 g yogurt
  • 150 g white chocolate coating
  • 12 strawberries

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat the oven to 180°C. Place paper baking cups into the wells of a muffin tin. Thoroughly mix the flour with the strawberry pieces, chocolate, cinnamon, baking powder, and baking soda. Lightly beat the egg in a large bowl. Add the sugar, oil, and yogurt and mix well. Add the flour mixture to the egg mixture and stir just until the dry ingredients are moistened. Pour the batter into the paper baking cups. Bake in the oven for 20-25 minutes. Let the muffins rest in the baking tray for 5-10 minutes, then remove from the cups and cool completely on a wire rack. Melt the chocolate coating in a water bath. Dip the strawberries halfway into the chocolate coating and let them dry on greaseproof paper. Brush the muffins with the remaining chocolate coating, let them drain, and decorate with the strawberries. Variation: Instead of the white chocolate coating, you can also use whole milk chocolate coating.
