Quick blueberry cake

Ingredients for 1 servings:

  • 200 g butter, soft
  • 250 g sugar
  • 5 eggs
  • 1 packet of vanilla sugar
  • 350 g flour
  • 1 tsp baking powder
  • 700 g blueberries
  • Powdered sugar for dusting

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Perfect when spontaneous visitors arrive

Preheat the oven to 180°C (160°C fan-assisted oven). Line a baking sheet with baking paper. Cream the butter and sugar until fluffy. Stir in the eggs. Then stir the vanilla sugar into the butter mixture. Stir in the flour and baking powder. Spread the batter on the baking sheet. Distribute the blueberries over the batter. Bake in the oven on the lowest rack for 25-30 minutes. Let cool, dust with powdered sugar, and you’re done. Tip: This also works with raspberries, currants, etc.
