Risi-bisi according to my grandmother's recipe

Ingredients for 2 servings:

  • 1 cup rice, parboiled or long grain rice
  • 1 m.-sized onion(s)
  • 200 g meatloaf or leftover roast
  • ½ bunch flat-leaf parsley, chopped
  • 1 pinch of salt
  • some pepper, from the mill
  • 100 g peas, frozen

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Cook the rice in salted water according to the package instructions. Dice the meatloaf or leftover roast and fry in a pan. After about 2-3 minutes, add the onions and let them brown lightly. Reduce the heat, add the cooked rice and peas, and fry over low heat. Season with salt and pepper. Once everything has crisped up a bit, stir in the chopped flat-leaf parsley and fry for about another 3 minutes. Then transfer to a plate and serve. Serve with a green salad.
