Stracciatella – cherry muffins

Ingredients for 12 servings:

  • 1 jar cherry(s), (drained weight 350 g)
  • 250 g flour
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 egg(s)
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 80 ml vegetable oil
  • 250 g yogurt (stracciatella)

Working time approx. 15 minutes; Total time approx. 15 minutes

super fruity & juicy

Grease the muffin tin and preheat the oven to 180°C (160°C fan-assisted). Drain the cherries well. Mix the flour with the baking powder and baking soda. In a second bowl, beat the egg with the sugar until frothy, then stir in the vanilla sugar, oil, and yogurt. Then carefully add the cherries. Fold in the flour mixture, pour the batter into the muffin tins, and bake for 20-30 minutes—preferably immediately.
