Ingredients for 4 servings:
- 1 liter vegetable broth or meat broth
- 3 onions
- 500 g bread(s) (stale homemade or farmer’s bread, rye bread)
- 1 tbsp lard and butter
- Salt and pepper, to taste
- Chives, as desired

Typical Lower Bavarian bread soup, formerly called poor people’s soup
Bring the vegetable or meat broth to a boil. Meanwhile, cut the stale bread into bite-sized cubes. Arrange the bread cubes in a soup bowl. While the broth is still simmering, slice the onions into rings and fry them in a little lard and butter until lightly browned. Slice the chives into small rings. As soon as the onions are lightly browned, add them to the dry bread cubes, immediately pour over the broth, season with salt and pepper, and garnish with chives. The toasted onion rings give the soup its famous dark color and roasted flavor. Ready to serve. Enjoy.
