Ingredients for 1 servings:

  • 1 tbsp black pepper
  • 1 tbsp white pepper
  • 2 tbsp mustard seeds, yellow
  • 1 tbsp allspice
  • 1 tsp juniper berries
  • 1 tsp coriander seeds
  • 4 small chili peppers, dried
  • 1 bay leaf, dried
  • 2 carnations
  • 1 tsp salt
  • 1 tsp, heaped sugar, brown

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 18 minutes

The icing on the cake for vegetables

Briefly roast all ingredients (except salt and sugar) in a pan to allow the flavors to develop. Then process everything into a fine powder using a food processor, coffee grinder, or mortar. Add the salt and sugar and mix. The salt is intentionally used sparingly so you can adjust the seasoning to your own taste later. But be careful, go slowly; the spice is quite hot! I use it, for example, in a vegetable stir-fry with chicken breast. But this spice blend is suitable for almost any vegetable. A pinch here and there enhances any dish. If you’re adding potatoes, add a pinch of nutmeg.
