Ingredients for 4 servings:

  • 2 cups pearl barley
  • 2 cups vegetable broth
  • 500 g pea pod(s), fresh or
  • 300 g peas (frozen), approx.
  • 1 m.-large onion(s), red
  • 125 g cocktail tomatoes, small
  • 4 medium-sized gherkins
  • 3 tbsp yogurt
  • 1 tbsp rapeseed oil
  • 2 tbsp vinegar (white wine vinegar), milder
  • 2 tbsp parsley, chopped
  • salt and pepper
  • some basil, chopped for sprinkling

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the barley pearl barley in the vegetable broth according to the package instructions until the pearl barley is al dente. Strip the peas from their pods, halve the onion and slice into rings. Halve the cherry tomatoes and dice the gherkins. Place everything in a bowl. Combine the dressing ingredients and add to the bowl. Mix everything well and season to taste. Sprinkle with some chopped basil.
