Pancakes from the tray Bolognese style

Ingredients for 4 servings:

  • 100 g flour
  • 4 eggs (size M)
  • 100 ml milk
  • salt and pepper
  • 5 tbsp carbonated mineral water
  • 2 onions
  • 1 tbsp oil
  • 500 g minced beef
  • Paprika powder, sweet
  • 500 g tomatoes
  • 1 tbsp dried Italian herbs
  • 150 g cheese (Gouda), grated
  • Basil for garnishing

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 33 minutes

Line a baking tray with baking paper and place in the oven. Preheat the oven (top/bottom heat: 200°C, fan: 175°C, gas mark 3). Whisk together the flour, eggs, milk, salt, and pepper until smooth. Stir in the mineral water. Peel and finely dice the onions. Heat the oil in a large pan. Brown the minced meat, turning occasionally. Add the onions and fry briefly. Season with salt, pepper, and paprika. Remove the baking tray from the hot oven and immediately pour the batter onto it. Bake for 3-4 minutes. Wash and slice the tomatoes, and remove the pancake from the oven. Top the pancake with the tomatoes and sprinkle with herbs. Spread the minced meat on top first, then the cheese, and bake for a further 15 minutes. Remove from the oven, garnish with basil, and slice.
