Smokey's cucumber salad with horseradish dressing

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 1 small onion(s), finely diced
  • 150 g carrot(s)
  • 150 g celery
  • 1 tbsp horseradish, freshly grated
  • 1 tsp mustard
  • 1 clove(s) garlic, squeezed
  • 4 tbsp white wine vinegar
  • 2 tbsp broth
  • 3 tbsp olive oil
  • 2 tbsp natural yogurt
  • n. B. Pepper, from the mill
  • n. B. Salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

For the dressing, mix all ingredients well. Peel the carrots and dice them into tiny cubes, as well as the celery. Peel the cucumber in strips, leaving some of the skin on. Halve and deseed if desired, then cut into thin slices. Place the cucumber slices in a bowl with the diced carrots, celery, and onion and toss with the dressing.
