Caribbean rice salad

Ingredients for 4 servings:

  • 3 bags of rice (long grain rice)
  • 1 small can of peach(s), preferably with peach pulp
  • 1 pack of chicken, shredded, possibly already seasoned
  • 1 small jar of Miracle Whip
  • curry powder
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Boil water for the rice and cook the rice. Once the rice is boiling, brown the chicken strips in the pan. Drain the canned peaches, reserving the juice, and cut the peaches into small cubes. Add everything to a salad bowl with the rice. If you like, let the rice and strips cool down; I personally like the salad warm. Mix the peach juice with Miracle Whip and season generously with curry. The sauce should have a creamy consistency. Add a little water if necessary. Add the sauce to the other ingredients in the bowl and mix thoroughly. Season with salt and pepper, and add more curry if desired. Ideal as a barbecue side dish in the summer, as it is very fruity.
