Ingredients for 3 servings:
- ½ head of iceberg lettuce
- ½ cucumber(s)
- 10 cocktail tomatoes
- 1 carrot(s)
- 2 spring onions
- 1 small bunch of chives
- 2 tbsp raspberry vinegar
- 1 pinch of freshly ground pepper
- 2 pinches of salt
- 1 tsp maple syrup
- 1 tsp mustard, hot
- 1 tsp pesto (lovage pesto), optional
- 2 tbsp oil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Wash the lettuce and tear into bite-sized pieces. Wash, peel, and slice the cucumber. Peel and grate the carrot. Wash and halve the tomatoes. Wash, trim, and slice the spring onions. Wash, pat dry, and finely chop the chives. Mix the raspberry vinegar, salt, pepper, maple syrup, mustard, and lovage pesto, then whisk in the oil. Arrange the iceberg lettuce on salad plates, add the cucumbers and tomatoes, sprinkle with spring onions, carrots, and chives, and drizzle with the salad dressing.
