Lemon muffins

Ingredients for 1 servings:

  • 250 g flour
  • ½ pack of baking powder
  • 1 packet of vanilla sugar
  • 3 tbsp poppy seeds
  • 1 lemon(s), juice and grated peel
  • 120 g butter, soft
  • 200 g sugar
  • 3 eggs
  • 250 g sour cream
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • ½ tsp salt

Working time approx. 10 minutes; Total time approx. 10 minutes

Preheat the oven to 180°C. Place paper baking cups in the muffin tin. In a large bowl, combine flour, baking powder, vanilla sugar, poppy seeds, lemon zest, and salt. In a second bowl, combine butter, sugar, and eggs. Then add cream and lemon juice. Add the dry mixture to the wet mixture and mix until smooth. Using two tablespoons, fill the muffin tins. Mix 1 tablespoon of cinnamon and 2 tablespoons of sugar and sprinkle over the muffins. Bake for approximately 25 minutes. Let the finished muffins cool in the tin for 5 minutes, then remove from the oven.
