Ingredients for 1 servings:
- 100 g butter or margarine
- 2 eggs
- 100 ml oat milk (oat drink) or milk
- 100 ml mineral water
- 250 g spelt flour
- 200 g broccoli
- some oregano
- 1 pinch of sweet paprika powder
- some rapeseed oil
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
for toddlers, makes about 8 small pancakes
In a bowl, beat the softened margarine or butter with the eggs until fluffy. Add the milk and sparkling water. Wash and trim the broccoli, and coarsely grate the florets and some of the stem. Slowly stir the baking powder and flour into the egg mixture, then fold in the broccoli. Season with oregano and paprika, if desired. Heat a little rapeseed oil in a nonstick pan and cook about 8 small pancakes in the pan.
