Ingredients for 1 servings:

  • 250 g blackberries, wild
  • 250 g currants
  • 250 g blueberries
  • 250 g raspberries
  • 500 g gelling sugar 2:1

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 4 minutes; Total time approx. 12 hours 24 minutes

Thoroughly wash 250g of each type of berry (wild berries are best, as they have a more intense flavor). Discard any stems, leaves, and rotten berries. Mash all the berries in a bowl until smooth (using a potato masher) or puree with a hand blender (the spread will be coarser or finer, depending on your preference). Add 500g of gelling sugar and mix well. Cook everything in a large saucepan at high heat for about 3-4 minutes, stirring constantly. Immediately pour the mixture, while still hot, into clean jars with screw caps and seal them tightly. Allow to cool. Enjoy best on fresh (white) bread.
