Broad beans with bacon and garlic

Ingredients for 2 servings:

  • 1 jar beans, thick
  • 12 slices of bacon (breakfast bacon)
  • 5 garlic cloves
  • 1 tbsp dried sage or 2 tbsp fresh sage
  • 2 tbsp tomato paste
  • Cayenne pepper
  • Meat broth
  • Vinegar
  • oil
  • salt and pepper
  • Parsley, chopped flat
  • Baguette(s)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Slowly fry the bacon in a little oil in a large pan until crispy and keep warm. Briefly fry the chopped garlic and crumbled sage in the bacon fat (do not brown). Add the beans and tomato paste and fry. Deglaze with enough meat stock to make a thick sauce. Season with pepper, salt, and cayenne pepper. Cover and simmer for 10 minutes. Add more stock, if desired. Season with a little vinegar and stir in the chopped parsley. Arrange the bacon strips in a star shape on top of the beans and serve in the pan, accompanied by fresh baguette.
