Mandarin yogurt muffins

Ingredients for 1 servings:

  • 3 eggs
  • 180 g butter, room temperature
  • 180 g sugar
  • 1 packet of vanilla sugar
  • 125 g natural yogurt
  • 180 g flour
  • 1 ½ tsp baking powder
  • 1 small can/mandarin orange(s)
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

makes 12 pieces

Drain the mandarins thoroughly in a sieve. For the muffin batter, briefly beat the eggs until frothy. Add the butter, sugar, vanilla sugar, and yogurt and mix until smooth. Mix the flour with the baking powder, sift it into the egg mixture, and fold it in loosely. Grease the muffin tin and chill briefly or line with paper baking cups. Fill the holes two-thirds full with batter and top with one or two mandarin orange pieces. Bake at 180°C (preheat oven) for about 25 minutes. Let cool and then remove from the tin.
