Gnocchi with pak choi

Ingredients for 2 servings:

  • 200 g gnocchi
  • 2 heads of pak choi
  • 1 bunch(s) of cherry tomatoes
  • 1 spring onion(s)
  • 60 g Parmesan
  • 1 clove(s) garlic
  • some parsley
  • some chili
  • salt and pepper
  • e.g. lemon(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Chop the vegetables and coarsely grate the cheese. Sauté the onions, garlic, and the bok choy stalks. Add the chili and tomatoes, season with salt and pepper, and simmer over low heat for about 10 minutes. Then add the bok choy leaves and gnocchi to the tomato sauce and simmer for another 5 minutes. Now serve with Parmesan and parsley. Tips: Instead of bok choy, you can also use chard or spinach. If you don’t have Parmesan on hand, you can use sour cream, sour cream, or crème fraîche.
