Garlic oyster mushrooms

Ingredients for 1 servings:

  • 1 tbsp peanut oil
  • 2 garlic cloves, diced, or more if you like
  • ¼ tsp curry paste, yellow, as desired
  • 200 g oyster mushrooms, cleaned and weighed
  • 1 tbsp rice wine
  • 2 tbsp soy sauce
  • 100 ml vegetable stock
  • e.g. salt and pepper
  • 2 tsp cornstarch
  • Parsley, flat, chopped

Sauté the garlic in the peanut oil over low heat until fragrant. It shouldn’t brown. Now add the curry paste, followed by the mushrooms. Sauté everything briefly, then add the rice wine, soy sauce, and stock. Simmer for about 2-3 minutes. Mix the cornstarch with a little water or stock and add to the mushrooms. Bring to a boil briefly. Sprinkle the mushrooms with parsley and serve. Serve with rice or mie noodles.
