Ingredients for 4 servings:

  • 1 bunch of spring onions
  • 1 red bell pepper(s)
  • 4 eggs
  • 150 g flour
  • 400 ml milk
  • 150 g raw ham, thinly sliced
  • 3 tbsp oil
  • 1 bunch of parsley
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Hearty surprise

Rinse the spring onions, trim, and slice into rings. Quarter the peppers, trim, deseed, wash, and slice into strips. Separate the eggs and beat the egg whites until stiff peaks form. Combine the flour with the milk and egg yolks; season with salt, pepper, and nutmeg. Fold in the beaten egg whites. Sauté the peppers in a large, non-stick pan in 2 tablespoons of hot oil for 5 minutes. Cut the ham into strips, add to the peppers along with the spring onions, and sauté briefly. Pour the batter into the pan and let it set over low heat for 5 minutes. Turn, let it set for another 2 minutes. Tear it apart with two spoons, add the remaining 1 tablespoon of oil, and fry for another 3-4 minutes. Pick the parsley leaves, chop them, and sprinkle them over the top.
