Ingredients for 10 servings:
- 10 m.-sized eggs
- 50 ml milk
- 20 tbsp wheat flour type 1050
- 10 m.-large shallot(s)
- 250 g bacon, cut into strips
- 1 tsp salt
- 1 pinch(s) of sugar

Galette bacon & échalotes à la Didi
Beat the eggs with salt, sugar, and milk until frothy. Alternately add the flour and milk until a thin, creamy batter forms. Let the batter rest in the refrigerator for 30 minutes. In the meantime, peel the shallots, slice them into rings, and fry them with the bacon strips in a dry pan. Remove the batter from the refrigerator and stir again. Heat a crêpe pan with a little butter and add a ladle of batter. Quickly spread the batter evenly. When the top is dry, turn the galette over. Spread a portion of bacon and shallots on top, roll up the galette, and keep warm. Repeat this process until all is used up. Plate up and serve.
