Ingenious apple muffins with raisins and nuts

Ingredients for 1 servings:

  • 2 ½ cups edible bran (oat bran, not oatmeal)
  • ¼ cup sugar, brown
  • 1 ¼ tsp cinnamon
  • 1 tbsp baking powder
  • ¼ cup walnuts or pecans, chopped
  • ¼ cup raisins
  • 1 medium-sized apple, finely grated
  • ¾ cup milk
  • ¾ cup syrup (apple syrup)
  • 2 small eggs
  • 2 tbsp oil (walnut oil or rapeseed oil, Alba oil also tastes good, which is rapeseed oil with a butter flavor)

Working time approx. 15 minutes; Total time approx. 15 minutes

Wholesome with oat bran and brown sugar

The cup holds 160 ml. Combine the dry ingredients with the apple in a bowl. Combine the milk, apple syrup, eggs, and oil in another bowl or in a blender. Add to the dry ingredients and mix briefly. Grease a muffin tin or line it with paper baking cups and fill with the batter. Bake for 17 minutes at 175°C (350°F) in a fan-assisted oven. Let cool and enjoy. If you don’t have apple syrup, you can use half a cup of apple juice, but add a little more sugar.
