Mascarpone cherry layered cup

Ingredients for 4 servings:

  • 100 ml whipped cream
  • 200 g mascarpone
  • some sugar, to taste
  • 12 biscuits (amarettini, alternatively ladyfingers)
  • 50 ml raspberry juice
  • 4 cl Amaretto
  • Cherry(s) , from the jar for garnishing
  • some chocolate shavings, for garnishing

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Whip the whipped cream until stiff, mix the mascarpone with the sugar until smooth, and carefully fold in the whipped cream. Crumble the amaretti biscuits into small pieces – this is easiest done in a freezer bag and with a rolling pin – and divide them among 4 glasses. Mix the raspberry juice with the amaretto and spread over the biscuit crumbs. Spread the mascarpone whipped cream over the crumbs, then chill the cream thoroughly. Garnish with cherries and chocolate shavings before serving!
