To prepare East Frisian New Year’s cakes, also called iron cakes, you need a special waffle iron. Unlike soft egg waffles, these waffles are baked wafer-thin and crispy. This original recipe comes directly from East Frisia. Mix the flour with the sugar. Then stir in the egg and margarine and add enough water (no milk) to form a thick batter. Season with vanilla sugar and cardamom. Let everything rise overnight (if the batter is too thick the next day, you can thin it with a little water). The next day, bake the batter in batches in the waffle iron. Note: You can leave the waffles as flat discs, which make them easier to stack, or you can roll them into a log while they’re still hot using a piece of wood and then fill them with cream and/or fruit later. They also make great ice cream cones. To do this, you need to slide them, while still hot, into a pointed measuring cup, where they will cool and thus retain their shape.
