Meatloaf in a potato coating

Spread the love

Ingredients for 4 servings:

  • 1 kg potatoes
  • 1 large onion(s)
  • 1 red bell pepper(s)
  • 3 eggs
  • some marjoram
  • 1 tsp paprika powder, spicy (Allspiceón de la Vera)
  • salt and pepper
  • 4 slice(s) meatloaf, thickness to taste, I use about 8 mm
  • some flour
  • some oil or clarified butter
  • 2 tbsp lard

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 18 minutes

Leberkäse as a “one-pan recipe”, vegetables, filling side dish, meat – everything in there.

Coarsely grate the potatoes, as you would for rösti, place them in a kitchen towel, and squeeze the excess moisture. Coarsely grate the onion and bell pepper and mix well with the potatoes, 2 eggs, and a little marjoram. Season with salt and pepper. Beat the third egg with the paprika. Roll the meatloaf slices first in flour, then in the egg. Then coat them evenly with the potato mixture and immediately fry in a pan with the lard and oil mixture over medium heat for about 3 to 4 minutes on each side until golden brown. I recommend serving with a fresh salad.
