Quark cake without a base with mandarins

Ingredients for 4 servings:

  • 1 kg quark
  • 350 g sugar
  • 6 eggs
  • 2 pkt. vanilla almond pudding powder
  • 1 tsp, heaped baking powder
  • Vegetable cream, e.g. Rama Culinesse, for greasing the mold
  • breadcrumbs
  • 1 can mandarin orange(s), drained

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Combine the quark, sugar, eggs, pudding powder, and baking powder in a mixing bowl and mix everything with a mixer until creamy. Grease a springform pan (Rama Culinesse and a sheet of kitchen roll are quickest) and sprinkle with breadcrumbs (thickly!). Pour the quark mixture into the prepared pan (26 cm or 28 cm), scatter the mandarins on top, and bake the cake in a preheated oven at 175 degrees Celsius for about 1 hour. I use fan-assisted oven, but it also works with top/bottom heat. Turn off the oven and let the cake cool in the oven—this is important!
