Ingredients for 4 servings:
- 300 g mascarpone
- ½ cup cream
- 1 bar of chocolate (min. 70% cocoa)
- 1 tbsp brown sugar
- 1 pinch of salt
- possibly chili pepper(s)
- Carambola or other fruits
Instructions
Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes
Heat the cream in a saucepan, not too high. Dissolve the chocolate in the warm cream, add a tablespoon of brown sugar and a pinch of salt. Now add the mascarpone (it shouldn’t come straight from the refrigerator) and whisk until smooth. Pour the mixture into dessert glasses and chill for at least 1 1/2 hours. Remove the cream from the refrigerator 10 minutes before serving and garnish with something like star fruit slices. Admittedly, this dessert is quite high in calories, but it tastes simply amazing and is very quick and easy to prepare. I recommend experimenting a bit with the ratio of cream/mascarpone/chocolate. Some people like this dessert very thick and chocolatey, others prefer it creamy and lighter, which brings out the mascarpone flavor more. And another tip: when I warm the cream, I always add half a small chili pepper (seedless!), which I then remove before melting the chocolate. I always use chocolate with small, roasted cocoa bean slivers; it tastes especially great with the chili flavor. And one more thing: have a digestive schnapps ready for your guests. This cream is incredibly filling—especially after a meal.
