Ingredients for 1 servings:
- 1,000 g flour
- 2 packets of dry yeast or 2 cubes of fresh yeast
- 2 packets of vanilla sugar
- 2 eggs
- 100 g butter
- 350 ml milk
- 100 g raisins
- Cinnamon
- Hazelnuts, chopped
- 1 egg(s), beaten
Instructions

Yeast pastries from the Rhineland, for 6 – 8 pieces
Make a yeast dough from flour, dry yeast, vanilla sugar, eggs, butter, and milk. Let it rise until it has doubled in size. Preheat oven to 180°C. Divide the dough into 6 pieces, then divide each piece into 3 pieces. Form the dough into rolls and flatten the ends slightly (approx. 2-3 cm). Brush with the beaten egg, add raisins, chopped nuts, and cinnamon, and then roll the ends up slightly until the “inside” is no longer visible. Put the dough together to form a star with 6 “arms.” Repeat the process with the rest of the dough. Brush with the remaining beaten egg or milk before baking. Bake for about 20 minutes, until lightly browned. Of course, you can also bake 1 or 2 large ones instead of 6-8 small ones. They’re delicious warm, cold, for breakfast, and with coffee.
