Banana oat muffins

Ingredients for 1 servings:

  • 100 g oat flakes, fine
  • 180 g flour
  • 2 ½ tsp, leveled baking powder
  • ½ tsp, leveled baking soda
  • 100 g dark chocolate, chopped
  • 200 g natural yogurt
  • 2 m.-sized banana(s)
  • 1 m.-sized egg(s)
  • 120 g honey, liquid
  • 80 ml vegetable oil (e.g. sunflower oil)
  • 3 tbsp, levelled sugar
  • 1 tsp cinnamon powder
  • 12 paper baking cups

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Preheat the oven to 180°C (top/bottom heat, fan: 160°C). Arrange the muffin cups on the muffin tray. Combine the first five ingredients (oats, flour, baking powder, baking soda, and dark chocolate) in a mixing bowl, stir briefly, and set aside. In another bowl, combine the remaining ingredients (natural yogurt, mashed bananas, egg, honey, and vegetable oil), except for the sugar and cinnamon. No hand mixer is necessary; a wooden spoon will suffice for this recipe. Now pour the wet mixture onto the dry mixture. Mix everything together vigorously until a sticky mass forms. Fill the muffin cups with the batter (approx. 1.5 heaped tablespoons per cup), sprinkle with cinnamon and sugar, and bake for 20-25 minutes.
