Watermelon salad with cucumber, corn and feta

Ingredients for 8 servings:

  • 1 lime(s) (organic), zest and juice
  • 1 tbsp olive oil
  • ½ watermelon(s), seedless
  • ½ onion(s), red
  • ½ cucumber(s)
  • 1 can of corn
  • 3 tbsp fresh basil
  • 100 g feta cheese
  • salt and pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Total time approx. 40 minutes

Zest the lime and squeeze out the juice. Combine 1 tablespoon of zest, 3 tablespoons of lime juice, oil, salt, and pepper. Dice the melon into 1.5 cm cubes and finely chop the onion. Thinly slice the cucumber and drain the corn. Chop the basil into small pieces and crumble the feta cheese. Add everything except the feta cheese to the salad dressing and mix. Refrigerate for 30 minutes. Only then sprinkle the feta cheese over the salad, mix gently, and serve.
